Make These Dinner Rolls Yourself

It takes more than one day to put together a Thanksgiving dinner for a crowd. There are many things you can do ahead of time to make the dinner a great success. I generally bake pies the day before. The night before is when I get everything ready for the dressing if I am making turkey. Frozen dishes I make a week in advance. Salads and condiments can be done in the early morning after putting the bird in the oven. If I want fresh baked dinner rolls I bake them after the turkey is done.

Today is Monday so I started my dinner rolls this morning because Thursday is Thanksgiving. I think hot rolls make a meal more special. I make these a lot, not only for holiday dinners. They are easy and tasty.

I put 1-cup water, 1/2-teaspoon sugar and 2-packages dry yeast into a large bowl. Make sure the water is at least 110-degrees but no more than 115-degrees. I let that stand while I grind enough wheat berries to make about 1-cup whole wheat flour. When the yeast mixture is nice and bubbly, I melt 1/2-cup butter. Next I beat 3-eggs until they are foamy.

Now I use a wooden spoon to stir into the yeast mixture, 1/2-cup sugar, 1-teaspoon salt, the melted butter and the eggs. I put in 1-cup whole wheat flour and stir well. Then I gradually add unbleached all-purpose flour, 1-cup at a time, stirring well after each cup, until I have added 3-cups. When the dough is too stiff to stir with a spoon I cover the bowl and refrigerate it for up to 4-days. Sometimes I may have to use a bit more flour, it depends on the humidity that day.

On Thanksgiving day I take the dough out of the refrigerator about 1-1/2-hours before dinnertime. I butter a 9x13-inch baking pan. I turn the dough out onto a lightly floured surface and divide it into 24 equal-size pieces. I form each into a ball and place in rows in the pan. I cover the rolls and set them in a warm place rise. It usually takes about an hour before they get to be double in size.

I bake them in a preheated 400-degree oven for about 15-18 minutes. I brush them with melted butter after they come out of the oven. I usually make two pans of these because they seem to go pretty fast and if someone wants seconds I hate to turn them down.

These rolls can be made with all white flour, I just prefer to add my fresh ground whole wheat because I like the flavor of it..I never purchase whole wheat from a supermarket because I know it may have been sitting on the shelf a long time after it was ground. I can taste the difference, the fresh ground has a nuttier flavor.
